Program Brief

1 -year program that lays the foundations of becoming a professional chef.

ELIGIBILITY : Class 10 pass or equivalent
Duration : 1 year

Program Overview

This one year programme introduces students to the world of food production through basic operational techniques and hands-on core competency training. Highlights include classic European cooking methods, cuts, stocks and sauces as a foundation stone. Patisserie skills are developed through specialised courses and industry essentials of food safety and nutrition are taught in preparation for the students industrial training placement.

It comprises of two semesters of 16 Week plus 4 months internship with renowned hotels and restaurant chains in India.

CTH is an awarding body approved by Ofqual, DCELLS and CCEA who are the official regulator of qualifications, exams and tests in England, Wales and Northern Ireland respectively.

Hands-on learning is emphasized in our state-of-the-art practical labs to ensure students are well-updated regarding the latest developments in the field of global hospitality.

Experiential learning is one of the core learning attributes, the students are granted the liberty to innovate and experiment under the guidance of experienced faculty.

Realising the need of the hour, the curriculum also includes special English communication sessions which run round the clock during the course duration.

To keep our students motivated and confident, students learn from industry experts and trainers who are invited from time to time.


Students are further provided with an opportunity to refine their skills and experience the real world during their industrial training of four months in leading hotels, resorts, hospitality chains, etc.

Program Outline

The course of study is tailor- made, as it has been assimilated keeping in mind the trends and the various advancements in the field of hotel industry. The curriculum is of global standard and also acts as a catalyst in delivering the curriculum which is in sync with the industry. The module prescribed by CTH is rigorously adopted by the institution and with some value added modules such as English Communication and IT Skills.

A Diploma in International Culinary Art is basically an introductory program into the hospitality industry. It is ideal for people who seek entry level jobs in hotels, restaurants and fast food chains. An entrepreneur who wishes to apply business principles within the hospitality context or gain the ability to ensure the sustainability of a hotel or restaurant business may also be a part of this program. IIAS is especially known for its entrepreneurial alumni.


Those who wish to continue their studies in order to get a better knowledge of the industry and for better career prospects may go on to do the Bachelors degree program. However, students will have to do all years of the Bachelors Degree and must have cleared their Class 10 exams.

Placement Information

The Diploma in International Culinary Art aims to provide a good chance to the students to get absorbed in this sector just within one year of studies. Apart from working in hotels, the students can even set up their own venture anywhere- food courts, restaurants etc. and expect to have a rewarding business future ahead.
